Efeito da substituição parcial do cloreto de sódio por pimenta malagueta em apresuntado misto de carne ovina de descarte e suína
Resumo
O objetivo deste estudo foi investigar o efeito da substituição parcial do cloreto de sódio por pimenta malagueta (Capsicum frutescens L.), em embutido cozido, tipo apresuntado misto de carne ovina de descarte e suína. Foram desenvolvidas quatro formulações denominadas de F0, F10, F20 e F30 com substituição parcial do NaCl nas concentrações de 0, 10, 20 e 30% por pimenta malagueta liofilizada em pó. As formulações foram analisadas quanto às características físicas, físico-químicas, composição centesimal, microbiológicas e análise sensorial, além da quantificação de sódio. Descobriu-se com isso que é possível substituir até 30% do cloreto de sódio nos apresuntados mistos por pimenta malagueta, uma vez que apresentaram boa aceitação sensorial, característica que sugere a possibilidade de aproveitamento da carne ovina de descarte na elaboração de apresuntados.
