Avaliação de óleos compostos de soja (Glycine max L.) e amendoim (Arachis hypogaea L.) sob termoxidação

A formulação de óleos compostos surge como uma estratégia viável para aprimorar a estabilidade oxidativa de óleos vegetais, reduzindo sua suscetibilidade à oxidação e preservando compostos bioativos. Assim, diante da hipótese de alteração do perfil lipídico e da promoção de um efeito protetor sinérgico entre antioxidantes naturais presentes em óleos, o objetivo deste trabalho foi investigar a contribuição da adição de óleo de amendoim em diferentes proporções ao óleo de soja, a partir do monitoramento de sua estabilidade oxidativa, sob ensaio de termoxidação. Os óleos de soja (S), amendoim (A) e os óleos compostos SA1 (75:25 p/p) e SA2 (50:50 p/p) foram analisados quanto às propriedades físico-químicas, bioativas e antioxidantes quando submetidos ao ensaio de termoxidação a 180 °C por 20 horas. O óleo de amendoim se destacou por apresentar menores teores de anisidina, valor Totox e compostos polares totais durante o aquecimento. Em contrapartida, quanto aos compostos bioativos, o óleo de soja apresentou maior teor de tocoferóis totais. Por outro lado, os óleos compostos, SA1 e SA2, se sobressaíram com maiores teores de compostos fenólicos, carotenoides e atividade antioxidante por DPPH ao longo do processo. Os achados deste estudo evidenciam o potencial do óleo de amendoim como alternativa viável para melhorar a qualidade nutricional e funcional de óleos vegetais. Portanto, a formulação desses óleos compostos representa uma estratégia promissora para aplicações industriais, contribuindo para maior estabilidade oxidativa e preservação dos compostos bioativos.
